Thai Kale Quinoa Salad

  • 4-5 Shredded carrots
  • 1 head of Kale (any type), shredded
  • 1 cup (or so) of Quinoa
  • 1/4 cup apple cider vinegar
  • Juice of 1 lime
  • 1/2 cup peanut butter
  • 1/4 cup Soy Sauce
  • Sriracha, to taste
  • Hot water to melt the peanut butter
  • Optional add ins: peanuts, flax, sesame seeds, green onion

Massage the vinegar into the kale. Add in the cooked quinoa and carrot. In a separate dish combine the lime juice, soy sauce, peanut butter, and hot water. Don’t forget your sriracha! Pour the sauce in and combine. This tastes even better the next day!
